Step 1: The Kitchen Audit (NOVA 4 Exclusion)
- Action: Purge industrial oils from your pantry.
- Exclusion List: Soybean, Corn, Canola, Cottonseed, Sunflower, Safflower, and Grapeseed oils.
- The Label Rule: If a packaged product contains “Vegetable Oil,” “Hydrogenated Fat,” or “Shortening,” it is a NOVA Group 4 product and falls behind the 2026 Firewall.
Step 2: Stable Fat Restoration
- Cooking Fats: Use fats with high oxidative stability for all heat applications.
- Tier 1: Beef Tallow, Ghee (Clarified Butter), or Suet.
- Tier 2: Butter (for low-to-medium heat), Lard (if traditionally rendered).
- Finishing/Cold Oils: Use mechanically pressed fruit oils.
- Selection: Extra-Virgin Olive Oil, Avocado Oil, or Macadamia Nut Oil.
Step 3: The 2-Year “Clearance” Window
- Metric: Acknowledge the 2-year tissue half-life.
- Action: Consistency is paramount. To “wash out” the linoleic load from your mitochondrial membranes (cardiolipin), you must maintain strict avoidance.
